We recently posted a recipe to our Facebook page that got a good reaction from many of you so we thought we should share more ideas for what you can do with our delicious fairtrade foods!
Traidcraft have kindly sent out a round-up of lots of recipes they used on their recent roadshow and here is one of our favourites:
Dark Chocolate Spread
Make your own delicious spread for toast using a few Traidcraft ingredients including muscovado sugar, pictured below.
Makes 2 jars
100g 75% dark chocolate (TC)
100ml double cream
75g light muscovado sugar (TC)
A pinch of sea salt (TC)
Break the chocolate into small, even sized pieces and put in a mixing bowl. Put 100ml water in a small pan, together with the cream, sugar and salt, bring to the boil and simmer for 2 minutes. Pour over the chocolate and mix well until all the chocolate is melted and smooth. Leave to cool for 30 minutes, then mix in the butter until smooth and glossy. Pour into sterilised labelled and dated jars, seal and use within 2 weeks or refrigerate until needed for up to 1 month.

Here’s a slightly healthier recipe sent to us by Canaan Fairtrade using the delicious grain, Freekeh, that we stock.
Being super nutritious with high levels of protein, minerals and fibre, and being low in carbs, Freekeh is the ideal ingredient to use in salads such as this!
1 pack Freekeh
½ pound dried cherries
1 onion, diced
½ a lemon
1 bunch of parsley
1 cup of chopped walnuts
Rinse Freekeh well. For 1 C Freekeh, add 2 C water and 1 tsp salt. Bring to a boil, cover and simmer for 30 min. Fluff & then place in a bowl.
Sauté onions in 2 table spoons of olive oil, set aside.
Soften cherries in hot water for about 10 minutes over low heat.
Add cherries, sautéed onions, walnuts, & ½ lemon to Freekeh. Add 4 table spoons of olive oil, salt & pepper to taste. Serve!
